Carrots are an orange root vegetable. They are a main ingredient in cooking around the world. Carrot, celery and onion are the three primary ingredients in mirepoix.

Organic carrots should be selected if possible. The ends of the carrot as well as the skin are bitter and should be discarded or composted. Peeled carrots can be cut in almost any shape including dice brunoix, julienne, and sliced diagonally on a mandolin. Carrots can be served raw, boiled, braised, grilled, sauteed, etc.
