Celery

Celery is a mainstay of modern cooking. Both the stalk and the root celeriac or celery root are edible. Celery grows as clusters of thick green, fibrous stalks. Celery along with carrots and onions are the ingredients in mirepoix and a primary ingredient in most western stocks and sauces.

The celery stalks should be separated and washed. If the celery is to be served as stalks, a vegetable peeler should be used to remove the fibrous skin on the outside (back). Celery can be diced, chopped, sliced, etc.
