Caviar is the roe, or eggs of the sturgeon. There are three types of caviar, Beluga, Osetra, and Sevruga, each from its respective type of sturgeon.

Beluga caviar from the Caspian Sea is the most highly prized and sought after caviar, however, over-fishing has led to massive reduction in the number of beluga sturgeon. Many western countries including the United States currently ban the import of Beluga Caviar. Sevruga and Osetra Caviar is still available though less highly prized and generally considered to be of inferior quality.
