A gastropod mollusk from the coastal waters of California, Mexico and Japan. Abalone is considered a delicacy and is usually expensive to buy. It is common to find abalone served in Japanese Restaurants and sushi houses.
Abalone is a shellfish which can be purchased fresh, canned dried or salted. It should be cooked only briefly if at all, and becomes tough when overcooked. Abalone is usually prepared for cooking by either pounding or being sliced thin.
