Potato Pancakes

Ingredients:
- 6 potatoes, peeled
- 1 onion
- 1 egg
- Flour
- Salt
Process:
Grate potatoes in a food processor or with a box grater and place in a large colander. Wash several times with running water to remove the extra starch.
Grate onions in a food processor or with a box grater.
Mix onions, potatoes and egg in a mixing bowl and mix in flour until there is a batter coating the potatoes.
Spoon batter into a med-high saute pan with olive oil or clarified butter.
Test one pancake and adjust. Add another egg and more flour if necessary.
Salt and Serve
